See, with today being Friday it means I'm going back to work on Monday. I'm actually thrilled to be going back and from what I understand....I'm not supposed to feel that way It probably will pass in a week or so, but this staying home all day is causing me angst!! Like that word? Angst....Wonder where it came from. Certainly not my daily vocabulary, I can tell you that.
Ok, so I am cooking a Quiche right now. I'm planning on putting it in individual servings to take to work with me next week. Standing in the kitchen cutting and chopping and mixing has caused havoc with my back. I guess the sudden standing for a long time wears on you.(me). Thank goodness my job is a desk job. I can stand up and sit down as needed. Sitting down is the preferred method!!
I'm also marinating a pork roast. I may put it in the freezer and let it marinade but I'm thinking the last time I did that it tasted like crap,. Its marinating in Balsamic vinegar, Olive Oil, Garllic and Emeril's Essence. It was supposed to be used or frozen by today. Is marinating considered "using". If I leave it marinating for a day, do you think it'll be ok or should I freeze it just to be safe? Pork is funny. I sure would appreciate any advice so I don't ruin it. I probably should have frozen it when I bought it. Which was yesterday.
It'll be fine if you use it tonight or tomorrow. The balsamic vinegar alone will keep it safe.
I think it may be good to get back to work. See people and be out there, you know. But I am still here if you need a shoulder!
